Raschera D.O.P. is a cow’s milk cheeses (sometimes mixed with goat & sheep milk) from Piemonte, Italy that is made into a unique square form. It has a soft, springy paste with an earthy aroma of hay with subtle flavors that are described as buttermilk & almond !
