GOUDA, RED (HOLLAND)
GOUDA is Holland's most famous cheese, with its characteristic yellow interior dotted with a few tiny holes. It has a mild, nutlike flavor that is very similar to Edam, but its texture is slightly creamier due to its higher milk fat content, Gouda can be made from whole or part-skim cow's milk, and aged anywhere from a few weeks to over a year. Red Wax Gouda has a mild flavor that is particularly good when served with beer and dark bread.

Produced in the Het Groene Hart area of Northern Holland using a traditional Dutch Gouda recipe. The cheeses that make the grade for the Vintage 3 year have undergone a constant and rigorous selection process during their maturation. Aged 3 years, Vintage 3 has a rich flavor, subtle sweetness and crumbly texture found only in the very best aged cheeses. Its color is deep amber and burnt orange and the flavor is an amazing combination of sweet butterscotch with a hint of saltiness.
