- This versatile sheep’s milk cheese is “a classic” that can be eaten as a table cheese or used for grating. Very popular in both Calabria or Sardinia. Artisanally produced from January to June when the sheep's milk is at its peak in flavor and yield it is then placed in wicker baskets which create its distinct rustic markings on its rind. Aged from 4 to 8 months, it has a distinctive, full and sharp flavor ! Crotonese has more sheepyness, nuttiness and citrusy zing than similarly aged Pecorinos from Tuscany ! Try serving with red wines like Ciro or Brunello !
