SHROPSHIRE BLUE started out as a Scottish attempt to replicate Stilton cheese but with a subtle twist of adding annatto to the milk to give it an orange hue. The result is a soft textured, mellow, blue cheese with a glorious contrast of colors between the orange hue of the curd and the delicate blue veins. Shropshire Blue is made from pasteurized cows' milk with vegetable rennet. has been described as a cross between Stilton and Cheshire The paste is a soft/creamy/fudgy with a mildly sharp, somewhat tangy flavor and a slightly tangy aroma. It is slightly sour but sharper than Stilton and generally creamier.

Toma Piemontese is a pasteurized semisoft cow’s milk cheese aged a minimum of 90 days. The cheese is made in the provinces of Novara, Vercelli, Biella, Turin and Cuneo as well as in several towns located in the provinces of Asti and Alessandria. It possesses many similarities with the French Tomme de Savoie, which is understandable due to Piemonte’s close proximity to France. It has a natural rustic brownish-gray rind that accrues mold. The paste has a unique yellow tinge. It has a smooth & creamy full flavor with a sweet, lingering finish. Pair with any of the wonderful Piemontese wines such as Barbera, Dolcetto Barolo, Barbaresco and Gattinara !

Ossau-Iraty is a traditional AOC Sheep’s Milk Cheese from the picturesque mountains of The Pyrenees near the Spanish Border. It received an AOC protection in 1980, which requires that the cheese be produced with the milk of only two breeds of Sheep…Manech and Basco-Béarnaise. It has a semi-hard in texture with a brownish-gray rind with an ivory-white, supple and slightly grainy interior that has a creamy and buttery mouth feel. Matured for at least 4 months, Ossau Iraty has an herbaceous, nutty, fruity & caramel-like nuances ! For a cheese board and best served with a nice bread, black cherry jam. To pair with wine try Pinot Gris, Bordeaux Blanc, any medium-to-full bodied Merlot, or rare local Basque wine such as Irouléguy.
