We use only the highest quality Goat’s Milk & added ingredients to gain the smooth and creamy texture & fabulous flavors ! To source highest quality Goat’s Milk we work with the largest network of independent goat milk farmers in the United States. Once the prime quality milk has been collected from our network of independent family farms, it is slowly drained and folded with high-quality ingredients to ensure the rich and smooth texture that chefs and consumers know and love. VERONI SALAME FELINO
SALAME FELINO is finally introduced to USA for the first time by MUSCO FOOD CORP. !!! Salame Felino is a famous pure pork Salame from Felino, a small town located in the lush green valley of Sala Baganza in the Province of Parma, Italy. Salame Felino is made according to the ancient art of Salame-making and distinguishing it from other pork products made in the hills of the nearby Apennine Mountains. This special Salame is the product of the best pork meat and the particular microclimate of the area of production, allowing it to be aged naturally due to the ideal temperature and right amount of humidity and ventilation. The fresh meat used to make the Salame is carefully selected from deboned shoulder and belly that is ground with lean and fat cuts of ham. The meat is mixed with salt, spices and natural aromas. After the meat is coarsely ground, salt, whole peppercorns and white wine are added. The Salame is then stuffed by hand into a pork casing, which gives it its characteristic uneven width. It is then aged slowly and the final product should be soft, with a sweet taste and delicate aroma. Traditionally, it should be cut at a 60° angle to highlight the grain of the ground meat and to avoid any tearing of the product.

This versatile sheep’s milk cheese is “a classic” that can be eaten as a table cheese or used for grating. Very popular in both Calabria or Sardinia. Artisanally produced from January to June when the sheep's milk is at its peak in flavor and yield it is then placed in wicker baskets which create its distinct rustic markings on its rind. Aged from 4 to 8 months, it has a distinctive, full and sharp flavor ! Crotonese has more sheepyness, nuttiness and citrusy zing than similarly aged Pecorinos from Tuscany ! Try serving with red wines like Ciro or Brunello !

Toma Brusca is truly special & unique ! It is somewhat similar to the DOP Castelmagno & Roccolo. It has a grayish-brown rind with a white/slightly ivory interior. When young, it has a slightly granular texture that becomes smoother in consistency as it matures. The flavor is delicate, refined and complex with earthy nuances & acidic notes. The name TOMA BRUSCA actually translates into Acidic Cheese, which is a result of the evening milk left overnight to begin the curdling process & then the fresher morning milk is incorporated. Little rennet is needed because of this process, which results in an exceptionally pliable/velvety cheese !
