Aged Montasio D.O.P.
Montasio DOP is a cow’s milk cheese which is produced Friuli-Venezia Giulia Region of Italy bordering Slovenia on the East and Austria to the north. Montasio’s origins date back to the 1200’s when it was originally produced by Benedictine monks. This Montasio is at least two months old and has a mild flavor with a creamy consistency. It has a delicate, somewhat fruity flavor with just a hint of nuts. Montasio cheese is an excellent place to get started in the world of Italian Specialty Cheeses. Montasio cheese goes well with any of the wines from the Friuli-Venezia Giulia region. Pair it with a Pinot Grigio, a Merlot or Sauvignon Blanc. Montasio is often shredded over Polenta or used in the making of the famous “Frico”, which is similar to an Omelet or Frittata.
