Comte
COMTE is considered one of the finest, best made cheeses in the world. This wonderfully aged, raw cow’s milk cheese is produced by local villagers in alpine dairies called “Fruiteries” in the Comte Region of France, on the border of Switzerland. The milk used comes only from Montbeliarde and Tachete de L’Est cows, which contribute to Comte’s unique flavor. Each 70 lb. wheel is aged to perfection creating a cheese that is deeply complex and impossible not to love. Comte is often described as nutty and fruity, but you may pick up hints of toffee & chocolate from its smooth, supple paste. Comte is fantastic on its own, melted in fondues or filled cheeses, or grated in potato gratins and casseroles.
