Guanciale with Black Pepper
Guanciale is a cured pork specialty made with the cheeks of heavy Italian pigs. The meat is rubbed down with spices – notably black pepper – and slowly cured. The result is an incredibly savory, intense meat that crisps up beautifully in a pan. An essential ingredient of a proper Italian Carbonara, you’ll also love it shaved thinly and draped in salads, or crisped up and tossed on crostini. Levoni Guanciale comes with the skin already removed, making it ready to slice.
