Spain’s most famous cheese, Manchego is a name protected, sheep’s milk cheese produced in the La Mancha region in Central Spain. Made using the milk of the Manchega sheep, it is easily recognized by its resembled by the herringbone pattern on the rind. Aged for six months, this version is firm in texture, ivory colored, and a slightly nutty flavor.
