Produced only in Tuscany, Italy under D.O.P. guidelines just like Pecorino Toscano Fresco, but aged a full 60-90 days. The extra aging produces a firmer Pecorino with greater complexity and richer flavor. Hearty & very flavorful, but not overwhelming; this is a wonderful table cheese that pairs well with Big Tuscan Red Wine.
