Tours de Paris is an easygoing, pleasant brie. Beneath its fluffy white rind, its pale straw-yellow paste is mild, buttery, and a little less salty than most other Brie. It also offers a touch of sweetness, which is somewhat rare for this type of cheese, along with the vaguest earthy hint of white mushrooms.
