Toma Piemontese
Toma Piemontese is a pasteurized semisoft cow’s milk cheese aged a minimum of 90 days. The cheese is made in the provinces of Novara, Vercelli, Biella, Turin and Cuneo as well as in several towns located in the provinces of Asti and Alessandria. It possesses many similarities with the French Tomme de Savoie, which is understandable due to Piemonte’s close proximity to France. It has a natural rustic brownish-gray rind that accrues mold. It’s slightly irregular shape is due to the use of hemp and linen pieces of cloth, manually tightened according to the traditional production method. The paste has a unique yellow tinge. It has a smooth & creamy full flavor with a sweet, lingering finish.
