Vaca Rossa Parmigiano Reggiano Quarter – 30 months
This Parmigiano Reggiano is produced in the province of Reggio Emilia with sweet milk coming from a particular breed of cow, boasting a striking red hide. Their milk has a higher butterfat content and contains more proteins than usual. This combination allows for the production of a cheese that is better suited for a longer period of aging, requiring a minimum aging of 30 months, compared to the usual 24 months. Its unique nutty, fruity, grassy flavor is richer than most Reggiano and its texture is somehow more creamy, even though it is aged for a much longer time.
