The fantastic Sardinian cheesemakers at Central decided to experiment with Goat Milk – the result is Goat Moliterno. This cheese has a relatively light color rind and a pale white paste. Unlike cows or sheep, goats convert all of the golden carotenes it ingests into vitamin A, which gives the milk a bright white color. The cheese itself is creamy yet slightly crumbly, with a rich, nutty and earthy flavor. Make it the star of a cheese board!
