Speck

Speck is a specialty from Northern Italy, specifically the mountainous Trentino Alto Adige region. Speck is made from particularly lean pork legs, trimmed, salted and flavored with garlic, pepper, juniper berries, and other spices and aromatic herbs. The speck is smoked and aged until it reaches its full potential: a dry yet tender texture and rich, deeply savory flavor. It is perfect in paninis and sandwiches, or used as an ingredient in pasta dishes.
