Since 1991, Puglia Sapori has been producing high-quality snacks typical of the Apulia region in Southern Italy. The company started in the small but lively town of Conversano and has grown significantly over the past 30 years. Apulia, the “heel of Italy”, is renowned for its rich culinary traditions. The origins of taralli date back to the 1400s in Apulia, born out of necessity during times of scarcity. People combined simple pantry staples such as flour, extra virgin olive oil, salt, and white wine. This mixture was then shaped into rings, left to rise, boiled, and baked to achieve the perfect crunch. Today, taralli are a beloved staple in Italy, enjoyed as an aperitif and to accompany drinks and wine.
The Unique Craftmanship of Taralli
Puglia Sapori’s taralli express the authenticity of Mediterranean tradition by using only simple ingredients and adhering to traditional recipes. The production process of taralli involves six meticulous phases:
- Selection & Mixing: Meticulously selected raw materials are mixed together.
- Shaping: The mixed dough is transferred to a steel table, split manually and put in an extruder. The dough that comes out of the extruder is cut and turned manually.
- Boiling: The taralli are then boiled in water, a crucial phase that enhances their scent and consistency.
- Baking: After boiling, the taralli are placed in a rotary oven to ensure even baking.
- Cooling: The taralli are then cooled to preserve the ingredients’ properties.
- Packaging: Once cooled, the taralli are packaged and shipped out.
