Fennel Slaw
Bright and crunchy, this delicious slaw brings zing and texture to any sandwich.
8 Heads Fennel, sliced thin
1 medium sized Red Onion, sliced thin
1 1/2 TBSP Dijon Mustard
1 1/2 TBSP Vantia Extra Virgin Olive Oil
1 Tsp Whole grain mustard
2 1/2 Cup Low-fat or Regular Mayo
2 TBSP Local Honey
2 TBSP White Balsamic Vinegar
1 Lemon Zested and Juiced
1 Tsp Crushed Red Pepper Flake
1 Tsp toasted Fennel seeds
1 Hefty TBSP Chopped Chives
Salt & Pepper to taste
Steps: Add Fennel and Red Onion to a large mixing bowl. Mix Mustards, Mayo, Honey, Vinegar, Lemon, Fennel seed, and chives to make the dressing. Dress the Fennel and Red Onion with the dressing and mix thoroughly. Let marinade for 3-4 hours under refrigeration.
Marinated Peppers
It only takes a few ingredients to elevate the humble pepper salad: White Balsamic Vinegar and honey add a touch of sweetness and complexity to this elevated classic.
1 Can Vantia Roasted Peppers (2.9KG)
2 1/2 Cups Vantia Extra Virgin Olive Oil
1/2 Cup White Balsamic Vinegar
2-3 TBSP Local Honey
4 Cloves of Garlic, minced or sliced
1/2 Cup Fresh Chopped Parsley
2 Tsp Crushed Red Pepper Flakes
Salt & Pepper to taste
Steps: Cut Pepper hulls into ¼ inch strips and place into large mixing bowl. Add Olive oil, Vinegar, Honey, Garlic, Parsley, and Pepper flake. Mix all ingredients thoroughly and let marinate for at least 4 hours under refrigeration.
