Hailing from the province of Tripani, in Sicily, castelvetrano olives have a distinctive bright green color and a wonderful a meaty texture. Reminescent of cerignola olives, they have a bright flavor tempered by a pleasing touch of bitterness. Serve them as part of an antipasti or cheese board, or toss into Mediterranean stews and salads.
