Nostrano Salame
Golfera’s Salame Nostrano comes from the countryside traditions of Emilia-Romagna, where its name, meaning “our own,” speaks to a time when families cured their own meats for festive gatherings. Made from select pork and diced fat seasoned simply with sea salt, black pepper, garlic, and white wine, it is filled into natural casing, hand-tied, and slow-cured into a rustic, medium-grind salame with visible marbling and a satisfying bite. The flavor is full-bodied and aromatic with a gentle peppery warmth and a hearty, traditional character. At 2 lbs, the whole salame is a natural for the deli counter or a rustic antipasto board, sliced alongside crusty bread, a robust red, and an earthy cheese like Taleggio.
